Colonial Gastronomy: Punches, Cordials & Refreshers

Drinks we would now normally buy in the supermarket or fine-food stores were once made in the family home, from simple barley water to elderflower wine and ginger beer.

Fruits in season and exotic herbs were cherished for their flavour as drink refreshers. Join our resident colonial gastronomer, Jacqui Newling, to explore a range of ‘liquid treats’ that were concocted and enjoyed in a 19th-century household. Sample forgotten flavours and lost techniques, and make your own lemon ‘sherbet’ from an 1816 recipe, to take home.
