Gingerbread biscuits

This gingerbread biscuit recipe has been adapted from a handwritten recipe found at Rouse Hill House and Farm.

You will need:

Ingredients for the biscuits:

  • 225g treacle
  • 110g butter
  • 110g brown sugar
  • 450g flour
  • 25g ginger, ground
  • Good pinch salt (optional)
  • 1 teaspoon bi-carb soda
  • 60ml milk

Ingredients for the icing:

  • 1 egg white
  • 1 cup icing sugar

  • Scales
  • Large mixing bowl
  • Saucepan
  • Mixing spoon
  • Rolling pin
  • Whisk
  • Sieve
  • Baking paper
  • Chopping board or smooth surface
  • Tray
  • Cookie cutters
  • Teaspoon
  • Freezer bag
